Great write up on honey in the United States. I love honey – the flavor profiles, the sweetness and the way it soothes a sore throat. Plus, natural honey doesn’t spoil. The problem? A lot of what you buy probably isn’t what you think it is, even if the label says otherwise. It’s a long article, but fascinating and informative. Too busy being locked up at home to read? No problem, I’ll sum it up.

The honey you buy is probably diluted and/or refined to the point where it isn’t anything like you thought because we don’t actually have any real regulation here in the States. Buy local and support your local bee keepers!

I chose the Shorter Whitman because of his work, "Song of Myself" and because of my self-deprecating sense of humor. I am under no illusion that I can write successful essays or poetry, but I have been known to write them anyway.
